Ingredients:
• 2 blocks Philadelphia Cream Cheese ( regular)
• 1 egg
• 3/4 cup white sugar
• 1/2 lemon
• 1 stick of gram cracker's (1 cup)
• 1/4 butter
• 2 tablespoons Bailey's or your favourite liquor or coffee

To assemble being with a muffin tray one that fits 24 muffins. Place muffin liners in each slot. Next is to organize the crust. To do this take your gram crackers and either put into a food processor, or manually break them up. To this mixture add 1/4 of melted butter. Use hands to make the crust come together and mix well. Next take a spoon and fill each muffin slot with gram cracker mixture. Flatten out with hands and fill about about a quarter of the way. In the meantime begin to add 2 blocks of regular philadelphia cream cheese softened to mixing bowl. Add 1 egg. Begin to mix until well incorporated. Squeeze 1/2 of fresh lemon to the mixture along with your favourite liquor or coffee. We used Bailey's and use 2 tablespoons. Mix together and than spoon cream cheese mixture on top of the gram cracker crust. Bake at 350 until lightly brown about 30 minutes. Make sure to let completely cool before eating about 1 hour. Enjoy.
